Free Range Duck Eggs
 

Duck eggs compared to hen eggs:

  • They have a smooth shell that is stronger and less porous than hens egg shell.
  • On average they tend to be larger, so the duck egg sizes are XL up to HUGE
  • They tend to have a proportionately larger yolk.
  • They contain less water, so the whites appear more gelatinous
Duck eggs are not regulated, so there are no rules or guidelines on quality. For this reason you should investigate the standards used on the farm and make sure the standards have been kept high.

Before and duck eggs are sold they should be candled, washed, graded and then packed.
Candling is a process of shining a light through each egg so that the contents and shell quality can be examined for cracks and problems.

Duck eggs can be used in exactly the same way as hen eggs.
